Christophe Bonneau trained and worked in top hotels and Michelin-starred restaurants before opening his own cheese and delicatessen at 5 Market Street in 2006. Two decades on, the same owner is still behind the counter, cutting cheese from the wheel and carving local free-range ham, in the Bath-stone Pippet Buildings beside the old Gothic doorway, a few steps from the Saxon church and the medieval Town Bridge.
